Paleo Meal Monday: Avocado Chicken Salad

How have I been posting Paleo recipes for a month, and none of them have had meat??? I guess I was so excited that I could still bake, I left out the meat…

Avocado Chicken Salad

  • 1 cup chicken, diced
  • 1 egg, diced
  • 2 tbps diced red onion
  • 1/4 cup diced celery or zucchini
  • 1 avocado, ripe
  • 1 lemon, juiced
  • salt to taste

Dice your chicken, egg, onion, and celery. Scoop your avocado into a bowl and mash with a fork until creamy. Mix in lemon juice and a couple dashes of salt. Add your diced foods to the bowl and mix until coated. You can eat it on bread, with chips or crackers, or if staying gluten-free and Paleo, put on a large leaf of lettuce and wrap up to eat!
