Paleo Meal Monday: Basil Chicken Fried Rice

I started by sauteing some red peppers and zucchini in olive oil with a dash of salt. I added some leftover cauliflower rice and fried it up as well. I gave it a couple of shakes of onion powder and then poured it all in a bowl. I added another dash of salt, some cracked pepper, a generous amount of fresh basil, and the juice of half a lime. Splendid!

The next day for lunch, I added some leftover chicken, and ate it cold. I thought it tasted even better.
