These delicious creations are a big hit around our house. I made them for dinner the other night, and my oldest asked for them again for lunch. They are quite tasty for grown-ups as well.

Hamcakes
adapted from NomNom Paleo
- 4 eggs
- 1/4 cup coconut flour
- 2/3 cup diced ham
- 1/2 cup pureed zucchini
- 2 tbsp fresh basil, chopped
- 1/2 tsp baking powder
- salt and pepper to taste
Whisk eggs, flour and baking powder until lumps are gone. Add ham, zucchini, basil, and pepper. I didn’t add any salt because our ham was salty enough. Mix all together. Heat pan with coconut oil over medium heat. When oil is warm, drop a scoop into pain and fry on each side for about 2 minutes. My kids loved these with ketchup!

Thank you for sharing this at Fit and Fabulous Fridays! I love Paleo recipes. I have given up wheat and sugar so I am making a lot of Paleo recipes lately. This sounds delicious!
Found your recipe 2 weeks ago and have been making it regularly since then. We love it! Although so far, I haven’t used coconut flour. I have been using trader joes almond flour as its what I have on hand. I have also used bacon instead of ham, that I pre-cooked and chopped up. Tasty! Thank you.
