Paleo Portobello

I saw some large portobello mushrooms on markdown at the store today and decided to try a new creation!

  • 2 large portobello mushrooms, stem and gills removed
  • 5 pieces kale, chopped
  • 1.5 cups cauliflower rice
  • 1 clove garlic
  • 1 tsp ginger paste
  • 1 tsp coconut aminos
  • 1 tbsp coconut oil
  • salt

Lightly cover portobellos with coconut oil on both sides using a brush. Place on a cookie sheet and cook for 10 minutes on each side at 350 degrees.

In the mean time, sautee your kale and cauliflower rice in coconut oil. Add ginger, garlic, coconut aminos, and salt in the last few minutes of cooking.

When portobellos are done, pull them out and top with sauteed mixture. Enjoy!

    So we’ve decided to give the whole Paleo thing a try. It keeps coming up so I looked into it much more in depth and it makes a lot of sense. I’m sure I’ll be calling for help!! Thanks for posting recipe ideas!
