Paleo Meal Monday: Chocolate Chip Muffins

I used the Chunky Monkey recipe from Paleo Parents for this creation! Kid approved.

Ingredients:

Puree the bananas and dates together in a food processor until creamy. Add sunflower seed butter (any type of nut butter would work here) and vanilla and puree. Add all dry ingredients (except chocolate chips) and pulse until it comes together. Stir in chocolate chips.

This is a thick batter, so if you drop it in balls in muffin papers, they will stay in a ball shape. If you want them muffin shaped, you will need to spread them out in the muffin tin. Bake at 350 for about 15 minutes.

    Where do you find ingredients like nut butter and coconut flour? Do you have to order from Amazon?

      Yes, I order mine through amazon. Nut butter we have at our local grocery, and there is a specialty grocer that has the coconut flour, but it is cheaper on Amazon, so I order it there.

      “Nut butter” is the all-purpose word for peanut butter, almond butter, etc. Basically, it’s one’s choice.

      Since we’re vegan by choice (well, my husband isn’t vegan, and our four-year-old gets meat and cheese on occasion, mostly from the local free-range organic meat market), we use all whole wheat flour.

        If you do use whole wheat flour, DO NOT use it in ratio to coconut flour. Coconut flour is very dense and absorbs liquid like a sponge, so you need less of it than regular flour. Yes, “nut butter” can mean any of the butters- peanut, almond, cashew, or nut-free seed butters like sunflower seed butter.

  2. My kids and I have been trying some of the recipes from Eat Like a Dinosaur this summer as part of our family cooking project. It does take some planning because I don’t have the ingredients on hand.
