- 2 bell peppers, cut in halves, seeds removed
- 2 chicken breasts, cooked and chopped (or ground meat of choice)
- 1 cup cauliflower rice
- 5 small button mushrooms, chopped
- 2 tbsp chopped fresh cilantro
- 1/2 tsp garlic salt, 1/2 tsp freshly ground pepper
- optional: shredded raw cheese
In a large pot, boil the peppers for 8 minutes. While these are boiling, fry your rice and mushrooms in coconut oil, and add garlic salt and pepper. Fry for a few minutes, then remove from heat. Add cilantro. Pull peppers out of water when finished boiling. The peppers should still be firm and not soggy. Stuff peppers with mixture and top with cheese if using. Broil in the oven for about 3 minutes. Enjoy!
