I started out making the Cauliflower Hummus from Practical Paleo (the best Paleo book EVER by the way….) and realized I was missing some ingredients, so went a different direction and had some awesome mashed cauliflower.
- 1 large head cauliflower, steamed until softened
- juice of 1 lemon
- 1 large clove garlic
- salt and pepper to taste
Place steamed cauliflower in the food processor with the lemon juice and garlic, salt and pepper. Puree well, so that the garlic gets incorporated. I topped with a dash of paprika. Enjoy!
