Here is a quick, tasty, Paleo breakfast or snack recipe:
- 1 banana
- 3 eggs
- 2 tbsp coconut oil, melted
- 1/2 lemon zested and juiced
- 1/4 cup coconut flour
- 1/4 tsp sea salt
- 1/4 tsp baking soda
- 1/2 cup dried cranberries
Puree banana in food processor. Add eggs and coconut oil, and pulse until combined. Mix flour, salt, and baking soda in separate bowl. Add zest of lemon to wet ingredients, and then add the juice. Quickly mix together, so that the lemon juice does not “cook” the eggs, then toss the dry ingredients in and pulse together. Add dried cranberries for a quick pulse.
Scoop in mini-muffin pan and bake at 350 for 15 minutes, or until they come clean with a toothpick. Let cool in pan, remove, and serve!
