Paleo Meal Monday: Chocolate Chip Pumpkin Pancakes

I love pumpkin. LOVE it. And I love this time of year when I can add pumpkin to just about anything!  (See here how to make your own pumpkin puree.) Here is a very easy grain-free recipe for pumpkin pancakes.

  • 2 eggs
  • 1/2 cup pureed pumpkin (see here to make your own puree)
  • 1 tbsp melted (but not hot) coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup coconut flour
  • 1/2 tsp pumpkin pie seasoning
  • 1/2 tsp baking soda
  • 2 tbsp allergy-free chocolate chips

Whisk together eggs, pumpkin, coconut oil, and vanilla. Add coconut flour, seasoning, baking soda, and whisk until lumps are gone. Add chocolate chips and stir in. Form into pancakes in your hand, kind of like making meat patties. Place pancakes on a lightly oiled (coconut oil) pan or griddle and cook for a few minutes on each side. Enjoy.
