Paleo Meal Monday: Paleo Puffs

Here is an extremely quick and easy paleo breakfast recipe. You can make it in the microwave in just 60 seconds!

Adapted from Gluten Free Holly:

  • 1 beaten egg
  • 2 tablespoons flax meal
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 tablespoon applesauce, coconut oil, or pureed sqaush
  • top with a couple of dried cranberries, raisins, or other dried fruit

Grease a ramekin or coffee cup with coconut oil. Whisk an egg in a bowl. Mix in dry ingredients and applesauce and stir until well incorporated. Pour in greased ramekin and top with dried fruit.

Bake at 350 for about 15-17 minutes, or pop in the microwave for 1 minute. I personally do not use microwaves, because I am not convinced that they do not change the structure of foods.

    Hm….this sounds really gross….but it looks really good and sooo easy and nutritious. I guess I will have to just give it a try! I have one kid though that will not touch most dried fruits. Especially raisins. Other ideas to top? I almost wonder if just a few choco chips on top will make her eat it up. Seems they eat anything with choco chips. LOL
